Aloo Bengun Curry

Aloo Bengun Curry Recipe1 large potato, cut into bite size pieces
2 garlic cloves, sliced
1 tsp chili powder
5 tbsps sliced coriander leaves
2 inches grated gingerroot
1 tsp cumin powder
1/2 an onion, finely sliced
1 c vegetable oil
1 large aubergine, cut into bite size pieces with the skin on
2 tsps curry powder
1 tsp turmeric


Recipe Procedure:


Boil the potato with a little salt & turmeric for 10-15 mins until almost cooked.
Fry the finely sliced onion until translucent in the veg oil.
Add the curry powder & cumin powder & sliced garlic & grated ginger & stir fry for 2 mins.
Chop the aubergine & add to the pan (wait until the last moment before chopping the aubergine to prevent it turning black).
Simmer on a medium heat for 20-30 mins until the aubergine is soft, 5 mins before the end add the cooked potatoes, mix well & leave to simmer.
